I find it very strange that our culture, this side of the world anyway, really doesn’t seem care much for this treat. We tend to opt for meat pies and savoury snacks, and if we are in the mood for something sweet, we reach for tarts and cakes
Now more than ever, we need some hearty rustic comfort food. If you find yourself with some time on your hands and you are craving something different, this is the recipe for you.

All about that base! The crust is the foundation of your master piece. I have changed my recipe over the years with all different types, however this one is my latest craze. All you need is:
- 3 1/4 cup all purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 cup room temperature coconut oil
- 6–8 tablespoons ice cold water
Mix all the ingredients together and add the water slowly till your dough is the right consistency. Let it chill while you make the filling. When ready, divide in two balls and roll it out. Pop one rolled out piece in your dish (pressing it in to fit evenly). Place the other piece of dough on top when your filling is ready (don’t forget to prick some breathing holes), or if you are feeling fancy cut it in strips and lattice it.
Drum roll please… time for filling! Prepare these ingredients:
- 6 medium apples or 7 cups chopped (peeled, cored, and diced)
- 1 lemon (zested and juiced)
- 3 1/2 cups water
- 1 cup white granulated sugar
- 1/2 cup light brown sugar
- 1/3 cup cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Mix all ingredients together, let it sit for a few minutes so they can get to know each other. Then place it all inside your dish, plop on the dough lid (I like to paint on a little milk and sprinkle a dash of brown sugar on top). Bake for approx 20 minutes on 180C or until golden and irresistible.
Remember life is what you bake it!
Till next time…
